Overnight Blueberry Waffles

Since I work I try and make the most of my 2 days off. I often make double and triple recipes and freeze . Its just as easy to  to make a large batch of something , that you can just pull out and warm up. Im not into fast foods eateries. They are often expensive and full of  fat &  lots of sodium.  I made a batch of these waffles to last us weeks. They are very large and this recipe makes 20. Its not going to take you hours to prepare. I spent around 10 minutes dumping it in a large food container, stir and cover and let sit over night. If you like sourdough, you would love these. The yeast in the recipe sitting overnight gives you that taste, plus they will not be heavy .  They will be crispy and amazing. I took several recipes apart to get this just right .

Over night Blueberry Waffle

1 cup warm water

5 Teaspoons dry yeast ( yes 5 Teaspoons is correct )

4 cups plain Kefir or Buttermilk

1 stick melted unsalted butter ( if you use salted butter, Omit salt in recipe)

1 teaspoon salt

3 cups All  Purpose Flour

1 cup Cornmeal, ( if you don’t wan the cornmeal sub 1 more cup of APF

4 TBSP Sugar

2 pints Blueberries (dusted with flour)

4 eggs

1/2 teaspoon baking soda

Eggs & baking soda  &Blueberries, are NOT added until the next morning

Remember batter will rise Double so get a big container , I use these for lots of recipes . mine is a little larger, but 6 Qt is plenty big enough for most of your needs.

Dump warm water Kefir or BM, melted butter, salt, sugar, flour & cornmeal, then yeast, mix well with hand mixer or wooden spoon. hand mixer is faster. Cover top with lid or if a large bowl, plastic wrap.

Next morning:  beat 4 eggs with fork and pour into your batter, add baking soda, and stir well.

Dust the berries with flour

dust with tablespoon of flour and shake of the extra, fold into batter

Turn on your waffle maker, and follow the instructions to your waffle maker. Most times people do want the mess of making waffles, but I made these 20 very large ones in my waffle maker and it only took Less then 20 minute to cook all 20 waffles with NO greasing NO overflows, and No cleaning up a mess. Seriously. Good appliances and less eating out will safe you a ton of money and it will taste so much better. This is what I use. They come in 2 slice or 4. There are only 2 of us in the house, but I still went for the 4 slice. Why?? Because ….It took 20 minutes for 20 waffles!  It has a moat which keeps it from overflows. NO spray, No Greasing, No stick
