I give it a thumbs up! What a perfect dessert. Great for breakfast too. It is mainly all apples and very little batter. Easy to make, and no rolling our pie crust.
You will need a 9 inch springform pan. I used a 8inch the first time and it too small. That extra inch make a big difference. Parchment paper. trace your pan insert and cut the circle to fit in bottom of pan. Spray non stick spray on bottom, place parchment circle then butter that and the sides as well.
I only made a couple of changes to suit our taste
6 large tart Apples like Granny Smith (they work the best)
3 large eggs
1 cup sugar, ( I used half brown, half white)
1 teaspoon vanilla extract
1 cup (125 grams) Unbleached all purpose flour (No self rising flour)
Cinnamon to sprinkle on layers of apples (my version)
raisins or dried cherries, or both like me
Powdered sugar dusting to finish (I skipped that)
Preheat oven to 350 degrees,
Pan should be ready before cutting Apples
Peel , Core and slice Apples. I cut in half, then each half into about 6 or 7 slices.
As you cut each one just lay them into your butter parchment lined pan . After each 2 apples sprinkle with cinnamon & dried fruit, repeat apples, cinnamon & fruit 2 more times
In a large bowl use a electric hand mixer and beat eggs & sugar well, then add in vanilla. Stir in flour with a spoon until its well combined. It will be very thick. (I also sprinkled a little Cinnamon in the Flour.) Spread batter on top of apples and press press down into the apple pile. The batter should be level with the top of the apples. Bake in preheated oven for 55 to 60 minutes. Cool in pan 10 to 15 minutes before flipping it out. I flipped mine out onto a dinner plate, removed parchment paper, placed another dinner plate on top so I could flip it back over. To me that was much easier. Sprinkle with powdered sugar or cinnamon or both, whip cream or ice-cream. I think it best Plain and less guilty. But thats just me. Dessert without all the guilt. Refrigerate and leftovers. Enjoy!
